Why these brands are different
There is a practical reason most appliance companies quote a replacement on a Sub-Zero or a Wolf rather than a repair. These machines use manufacturer-specific parts that are not on a general van, proprietary diagnostic modes that need the right service tooling, and in the case of built-in refrigeration, sealed systems that require EPA-certified refrigerant handling. A shop that mostly replaces Whirlpool drain pumps is not set up for that, and the honest ones say so.
The economics also work differently. Replacing a built-in Sub-Zero column is not a small decision once you count the unit, the panel work and the installation into existing cabinetry. That changes what counts as a sensible repair. A sealed-system job that would be absurd on a six-year-old freestanding fridge is straightforwardly worth doing on a built-in that has another decade in it.
Professional ranges have their own logic. A Wolf dual-fuel range is really two appliances sharing a chassis, with gas burners on top and an electric oven below, each with separate failure modes. Thermador columns and Miele machines report fault codes properly, which is an advantage if you can read them and a waste of money if you cannot, because the alternative is swapping parts until something works.

Built-in refrigeration and professional ranges need manufacturer diagnostics, brand-specific parts and refrigerant certification. A general repair shop without those will either decline the job or default to recommending replacement, which is the safer answer for them and the expensive one for you.
