Every job is priced after an on-site inspection, because the same symptom can mean a routine part or a sealed-system job. The technician checks the appliance and gives you the exact number before anything is opened up.

Marble and granite only
Replacing a countertop is not one job, it is four. The old slab comes out, the sink and cooktop are disconnected and refitted, new stone is templated, cut and installed, and the backsplash usually has to be redone where the old slab met the wall. That is why a chip that could be repaired for a few hundred dollars turns into a very large quote the moment someone says the word replacement.
Almost all of the damage we see is cosmetic and localised. A chip out of a bullnose edge, a crack running from the corner of a sink cutout, etch marks on marble where lemon juice sat overnight, a dull band along the front edge where the stone gets wiped a thousand times a year. All of it is repairable in place, and the finished repair is meant to disappear into the surrounding stone rather than announce itself as a patch.
We work with marble and granite specifically, not the full range of engineered surfaces, because the repair chemistry and the polishing sequence differ by material and doing two well beats doing six badly. Colour restoration is the part people underestimate: polishing brings back gloss, but restoring the depth of colour in stone that has faded is what makes the difference between looking cleaned and looking new.
Custom work is a real part of this. Drilling a new faucet or air gap hole into an installed slab, trimming a piece to fit after a cabinet change, adjusting a seam that was never dressed properly. Questions
In most cases yes. Cracks are stabilised, filled and polished flush so the surface is continuous again, and the repair is colour-matched to the stone. Replacement is only the sensible answer when the slab has failed structurally, which is rare.

The aim is that it is not. Fills are colour-matched to the stone and polished to the surrounding finish. On heavily patterned granite repairs disappear almost completely; on plain pale marble a close look in raking light may still find the spot.
